Two steps, not one. The economiser takes the first and largest drop by giving that heat back to the incoming oil; a water-cooled plate pack then pulls the oil the rest of the way to packing temperature. The final figure is a product-quality number as much as a process one: oil filled warm keeps oxidising in the pack. The gasketed stage still takes oil in hot, so the compound is Viton rather than nitrile.
